This feature is under the Dial Plan. You'll want to create a Service Group for the shop phones, assign those Call Appearances to it. You may need to use a Restrictions list or don't add any Outside Lines to the Service Group. They should still be able to dial internal extensions.

If this is over a SIP trunk then you're gonna have a bad time, most of the time. You may need to have the SIP trunk vendor set the CODEC to G.711U. If this is an analog line, bypass the Allworx entirely to see if that makes a difference. I can think of only one reason to connect a FAX with it's own ...

What is the gateway? That is key. If it is not the LAN gateway (meaning, the gateway routing through the VPN) then that's the problem. You can try creating a static route on the Allworx to the 192.168.100.0 network using 192.168.100.1 (if that is correct) as the gateway. I suspect traffic is getting...

This is always going to be one of two things: 1) firewall rules are not allowing/forwarding the correct ports or incorrectly. Please provide context. What is the problem? The troubleshooting you specify isn't really that.
If this is a remote phone, this could mean the PNP key is incorrect or missing but that is a guess since it is the only reference to "plug and play" relevant to Allworx as far as I recall.

Ah okay. That kind of makes sense. So there should be an email waiting for each voicemail and I could POP those emails from the Allworx email server.
